Kurdish food

FOOD, the most common word among people.  There are millions of recipes of food all around the world, but every country, every city, and even every household have its own dishes and favorite food and secret recipes.  There are so many different ways of preparation of food, also the ingredients, and the way it is cooked, the way it is preserved, the way it is served, and the way people enjoy their food, it is all depend on the people's background and the way they were raised.
For example spices are very important in Indian cooking, and at the same time vegetable dishes are so common.  People in Italy use lots of pasta, olive oil, tomatoes, cheese and meat.  Chines love fresh vegetable and fruit, seafood, noodle and steamed rice.
In Middle East, from Iran to Iraq, to Lebanon, to Syria, and also other countries like Greece and Turkey, we (I am Kurdish) have so many common food that nobody knows where the origin of these food.  To me it doesn't rally matter because for example Dolma is a dish that is made all over these countries, but they all are different, unique, and most importantly Delicious, and this variety make it so interesting.

Kurdistan is not a country , but we are about 25 to 30 million people, scattered between Iran, Iraq, Turkey, and Syria.  We have so many different dishes all over the land and all different ways of cooking.  Kurdistan from north (Bakoor) to South (Bashoor), and from East (Rojhalat) to West (Rojawa) is all surrounded by mountains.  There are geographical differences throughout Kurdistan region and this make a difference in product available for people to cook with.
